Fifth generation winemakers, Roger and Georges Antech, inherited the ancient craft of making Blanquette, the original French bubbly that pre-dates Dom Pérignon’s “discovery” of Champagne by over 150 years. The family’s property lies on gentle slopes that bask in the Mediterranean sunlight.

The grapes are harvested by hand and transported to the winery in crates. The grapes are fully de-stemmed and then go into vat, where the temperature is lowered to assist cold pre-fermentation maceration. The wine spends 10-12 days in vat. After a few days of settling, it is transferred into barrels, of which 25% are new. The wines are aged for 10-12 months in a cool cellar, during which time the barrels are Domaine Derain regularly topped up. The wines are bottled after several months’ blending together in vat.
