Montagne Saint-Emilion appellation lies just outside the village of Saint-Emilion, between Pomerol and Saint-Emilion and covers around 1 600 hectares of vineyards. The Château Labattut, a family-owned vineyard, is located near the hamlet of Labattut, on a well-drained hillside with a perfect southerly exposure.

The grapes are harvested by hand and transported to the winery in crates. The grapes are fully de-stemmed and then go into vat, where the temperature is lowered to assist cold pre-fermentation maceration. The wine spends 10-12 days in vat. After a few days of settling, it is transferred into barrels, of which 25% are new. The wines are aged for 10-12 months in a cool cellar, during which time the barrels are Domaine Derain regularly topped up. The wines are bottled after several months’ blending together in vat.
