The term “Château” has always been a legal tittle that remains tied to their history, their vineyard and their cognac.
The «Château Montifaud» has belonged to the Vallet Family for six generations now. The vineyard was created in 1837 by Augustin and has seen the succession of Pierre, Maurice, Louis and Michel. Laurent came to join his father and grandfather in October, 2000.
According to the family tradition, when a son joins his father, a part of the cognac distilled in that year is set preciously aside and will only be sold by the future generations. Thus it is that in the darkness of their «paradise» cellar lie bottles of Cognac skilfully made by Pierre and Maurice Vallet.
Their family cellars have also seen the ageing of cognacs that date from 1920 to the present day, part of which, in vintage years, has been sealed by the BNIC (the National Interprofessional Office of Cognac).
The «Château Montifaud» quality is achieved through:
– exceptional land: Petite and Grande Champagne, the two premier regions of cognac
– a quality wine: healthy harvests, rapid fermentation, temperature control
– stocking wines with their sediment
– distillation with sediments: a slow distillation
– a craftsman-like distillation
– an ageing so as not to accentuate a woody flavour characteristic
– a gentle reduction of the cognacs to avoid neutralizing them by using special distilled waters called «faibles» (weak)
– for each quality, our cognacs remain longer in barrels than the average age of cognacs
The expression of the floral characteristics and the roundness of our cognacs demand more time, but they are of a superior intensity and elegance thanks to the soil and our craftsman-like way of working.
