The vineyard stretches over the Thau Bassin and the Hérault river. The Domaine de la Madone, family owned single estate for many generations, covers 15 hectares of vines planted on the high terroir des Castelnaux.
Soils: Scrubland and sandy soils.
Harvest takes place at night when grapes have reached full maturity in order to preserve the aromas and the fruit intensity. When the grapes arrive in the cellar they are immediately protected against oxygen and pressed. The fermentation takes place at controlled temperatures.
Colour: Lovely pale crystalline green robe.
Nose: Pleasant nose with aromas of acacia and hawthorn flowers.
Palate: Great freshness, rich and generous with a fine acidity.
As an aperitif, with seafood and fish.
