The grapes are approximately 50 years old, at an altitude of 250-300m above sea level. Mixed soil, tuffaceous, calcareous, interspersed with clay zones, with iron-oxide rich sand and gravel.
This wine is born from a passion for the terroir and a careful cultivation of the Cortese vines. The grapes produced by these vineyards are subject to strict selection and only the very best, picked at just the right moment of ripening (mid-September). Fermentation is preceded by a cold maceration (about 48 h). Fermentation takes place at 14-15°C in stainless steel tanks, then the wine ages for about 10 months in steel tanks; the yeasts still present throughout the aging period with the aid of weekly “bâtonnage”.
A pale yellow color with flecks of green, this wine has a typically floral and balmy bouquet accompanied by mineral tones. It is intense, fresh and sapid, whilst at the same time robust and structured. Perfect with flavorful starters, raw fish, fish soup and grilled meats.
