Soil: limestone à entroques
Age of the vine: more than a 100 years old
Hand harvested, indigene yeast, 14 months in oak (30% new).
Excellent red and black fruit that is beautifully underlined by the full, healthy tannins on the medium -to full- bodied palate. Savory, nutty and earthy. This has plenty of cherries. Rather elegant, moderately dry tannins, which give this a graceful line. It drinks very well now, but can wait way longer.
Great pairing with beef, veal, deer, and poultry.
