The 29 year old vines, grown on the stony terraces of the Orbieu, benefit from strong exposure to the wind and are cultivated using organic methods and HVE (High Environmental Value) practices.
The Carignan and Mourvèdre grapes are destemmed, with 30% of the stalks added after vatting and blending before alcoholic fermentation. Aged in concrete vats for 8 months, no sulphites.
This wine features an intense violet color and aromas of black cherries, garrigue spices and menthol. On the palate, it offers velvety tannins and a round mouthfeel, finishing fruity and smooth.
It pairs well with meat in sauce or game.
