The grapes come from the appellation of Menetou-Salon, which is situated in the eastern part of the Loire Valley. The terroir is characterised by marl sediments dating from the Jurassic period, which is known locally as ‘Marne de Saint Doulchard’. The region is influenced by the northern, cool climate, resulting in lively wines from grapes with characteristic high levels of acidity.
The grapes were pressed and the juice underwent cold static settling for 48 hours. Fermentation took place in stainless steel tanks with selected yeasts lasting two to three weeks. The wine was then aged on the fine lees for six to nine months to impart texture and complexity. This cuvée was vinified without the influence of oak, allowing the pure fruit flavours to be fully expressed.
A crisp and refreshing Sauvignon Blanc with delicate aromas of exotic fruit, citrus notes and a hint of white floral blossom. Lovely and textured on the palate with a mouthwatering finish.
Great pairing with pork, seafood, spicy food and goat cheese.
