Nebbiolo grapes from various vineyards, on the hills of San Rocco Seno d’Elvio, in Alba and in Guarene, specifically from Cortine vineyard. The soil in Barbaresco is more fertile, with higher concentrations of limestone and sand.
Harvest starts at the second half of October. Crushing of the grapes, fermentation and maceration in steel. The wine evolves for at least 18 months in big oak casks. Several months follow in bottles stored horizontally in underground cellars.
Ruby red color, with garnet highlights. On the nose, red fruit jam, walnuts and macerated cherries, accompanied by spicy notes of cinnamon, vanilla and tar. On the palate, a warm, dry texture with good structure, supple tannins and a long, aromatic finish, followed by a mineral touch in retro-olfaction. Ideal with structured red meats, medium-aged cheeses and aged cheeses.
