Vineyard

Soil: clay-limestone, sand, gravels

Vinification

Harvests are carried out at perfect grapes maturity & overnight to preserve grapes freshness. The grapes are pressed immediately upon arrival at the winery in pneumatic presses. A Provence style vinification process is carried out. A cold, very short maceration for a few hours is carried out in order to extract a pale and crisp rose. Yeats are added to start the alcoholic fermentation. It’s carried out in thermos-regulated stainless steel tanks at 16 degrees. No malolactic fermentation is carried out in order to preserve a good level of freshness. The wine is then clarified by racking, fining and filtering. Ageing occurs in thermos-regulated stainless steel vats.

Tasting notes and Pairing

Colour: A very light, shiny salmon-pink Rosé.
Nose: A very expressive bouquet revealing aromas of fresh red fruits and strawberry
Mouth: Fine, crisp and elegant on the palate, a perfect balance.
The perfect companion for salads, grilled dishes and spicy shellfish, but can also be enjoyed on its own as an aperitif all year round. Best served at 9 – 11°C.
